Free Recipe Brandy Snap Baskets - Makes 10
4oz / 125g butter Place two Lift Off baking sheets onto trays. Melt butter with sugar and syrup in a pan over low heat. Remove from heat and stir in the flour, ginger, brandy and lemon rind. Spoon the mixture into circles about 5 mm thick and about 10 cm apart directly onto the Lift Off allowing plenty of room for spreading. Bake in oven 180°C (350°F) Gas 4 for approx 10 mins, until the mixture is bubbling and golden.
