Brandy Snap Baskets - Makes 10

4oz / 125g butter
4oz / 125g caster sugar
4 tbs golden syrup
4oz / 125g plain flour (sieved)
1 tsp ground ginger
Grated rind 1 lemon
1 tsp Brandy (optional)

Place two Lift Off baking sheets onto trays. Melt butter with sugar and syrup in a pan over low heat. Remove from heat and stir in the flour, ginger, brandy and lemon rind. Spoon the mixture into circles about 5 mm thick and about 10 cm apart directly onto the Lift Off allowing plenty of room for spreading.

Bake in oven 180°C (350°F) Gas 4 for approx 10 mins, until the mixture is bubbling and golden.

Allow to cool for 1-2 mins, then loosen with a palette knife.    

 
Then place over an upside down tea cup. Leave to set.
 
Fill Brandy Snap Basket with your choice of filling sorbet, ice-cream, mousse, whipped cream and fruit etc.
